OH. MY. HEAVENS. I have one of the most amazing treats to share with you today. Remember my No Bake Energy Bites recipe? Yeah, those babies were a pretty big hit with y'all, probably one of the most popular recipes I've ever posted. I'm so glad you love them as much as we do, that makes me smile. Well, ever since I posted that recipe I have had so many comments and emails about ingredient changes due to allergies, etc. since there is peanut butter in them. Man, how I felt bad. You can totally use sunbutter, almond butter or cashew butter as a substitute but I hear ya loud and clear, nut allergies stink and sometimes you just don't want to buy those substitutes cause they do look very similar to peanut butter and that can create some false safety issues with little ones! Maybe you are one of many that doesn't like to have any of that in your house?
So this summer, I played around with different versions of the recipe to help you out as well as to help us out since we like to do Gluten-Free, Dairy-Free and Paleo eating often in our home. As chiropractors, we totally see the benefits of getting rid of some of those allergy causing foods so we are always game to make up new recipes that use healthy and natural ingredients :-)
When we first tasted this recipe after I randomly threw the ingredients together can I just tell you how much we absolutely loved it? It is AWESOME! Have you ever had Mexican Fried Ice Cream? Well, if you have it totally tastes like that crunchy stuff they roll the ice cream in. Yup, there is a total honey and cinnamon taste to these. In fact, sometimes we just forego the ball-making and just sprinkle this on top of ice cream, YUM!
I wanted to call them 'Mexican Fried Ice Cream Bites' or 'Honey and Cinnamon Bites' but well, there is no honey or cinnamon in them, let alone ice cream. I don't know what it is about the combination of coconut oil and maple syrup but it is an awesome one, it may just beat out peanut butter and jelly for my taste buds ;-)
I truly hope you enjoy these, they are our new favorite after-school snack, after-soccer/swimming/gymnastics snack, after-dinner snack, ah well, you get it...we love them.
PS. These can easily be made Gluten-Free with the right ingredients (that's how we normally make them!) and they are Dairy-Free too...woot woot!
Nut-Free Energy Bites (make about 20 bites)
1 cup Rice Krispies
1 cup rolled oats
1/2 cup ground flaxseed
1/3 cup coconut oil (in soft state)
1/3 cup maple syrup
Mix all ingredients together in a medium sized bowl until well combined. Place in refrigerator for 30 minutes and then roll into balls. If mixture seems too sticky add a bit more oats.
And for those calorie counters out there, these are about 80 calories per ball! Eat up, dudes!
The dry ingredients...so simple and good for you. The wet ingredients. Umm, yeah. We like Trader Joe's just a little bit :-)
Here is my coconut oil in a soft state which would be at room temperature at our house. If you warm it up it becomes liquid which is a pretty neat science experiment in and of itself. You could use it in it's liquid state but you would need to change your dry/wet ingredient ratios a bit! PS. you do not want to use this straight out of the fridge. It will be too hard and not mix well. Your best bet...the soft, semi-solid state!!
Aren't oats just pretty to look at? You'll need one cup of these pretties.
Ground flaxseed, 1/2 cup. You could easily grind your own in a coffee grinder but I found an amazing deal on ground flaxseed a while back so now I am stocked for life...sort of. Make sure you keep ground flaxseed in the back of the fridge to keep it at it's best.

ReplyDeleteYum! We will definitely be trying these! My only suggestion would to NOT use Bob's Red Mill if you have a tree nut allergy that requires a dedicated facility. On the label it states that their products are manufactured on the same lines/in the same facility as tree nuts (they make almond flour.)
ReplyDeleteMy kiddos and hubby LOVE these! We add in chia seeds and sometimes chopped sunflower or pumpkin seeds! We also use almond butter or sunflower butter because of peanut allergies! They are great no matter what you put in them!

ReplyDeleteThis is so great! I can't tell you how long I've been looking for a nut free energy bar/bite recipe that doesn't include any of the faux- butters. My son has a severe peanut allergy so we don't do any nut products and he really isn't a fan of sun butter (I think mainly because it so closely resembles peanut butter) . Thank you ... Thank you ... Thank you!!! I can't wait to try these :-)
